UNAGIUnagi (うなぎ) is Japanese freshwater eel, a common ingredient in many recipes, high in protein, vitamin A, and calcium.  However, they are on the sustainable seafood advisory list due to the decrease in their populations over the last half century.  The Japanese government’s Environment Ministry added Nihon unagi
(Japanese eel) to their country’s
endangered list, with a high risk of complete extinction, according to
Japan Daily Press.
Unagi may also represent a state of increased awareness deriving from the Japanese fighting style Karate.  Once you have mastered the concept of Unagi, you will be able to protect and defend yourself from harm at a moments notice.
May you all find your Unagi, and may this new awareness bring enlightened creativity for Wednesday, August 27th!
